Ingredients

pork belly
green onions
ginger
garlic
rock sugar
star anise
cinnamon sticks
bay leaves
dried chili peppers

Step 1

Place the pork belly in boiling water with cooking wine, green onions, and ginger. Blanch it, then remove, rinse thoroughly, and drain the water.

Step 2

Add the pork belly to a dry pan without adding any oil.
Stir-fry until the fat is rendered out.

Step 3

Pan-fry until both sides are golden brown, then remove and set aside.

Step 4

Add oil to the pan again and add rock sugar.

Step 5

Stir-fry over low heat until the sugar melts and caramelizes.

Step 6

Add the pork belly to the caramelized sugar for coloring.

Add dried chili peppers, star anise, cinnamon sticks, bay leaves, green onions, and ginger.

Step 7

Add three tablespoons of light soy sauce, one tablespoon of cooking oil, and one tablespoon of dark soy sauce. Stir-fry until evenly mixed.

Step 8

Add enough boiling water to cover the ingredients. Simmer over low heat for about 40 minutes until the sauce is reduced.
